CHAPATTI
Chapati as commonly known as Chapatti is an unleavened flatbread (also known as roti) from the Indian subcontinent. Chapatis are made from a firm but pliable dough made from flour (whole grain common wheat), 'atta' and water. Some people also add salt and/or oil to the dough. Small portions of the dough are rolled out into discs much like a Mexican tortilla, using a rolling pin. The rolled-out dough is thrown on the preheated dry skillet and cooked on both sites.
NAAN WITH TANDOORI CHICKEN
Naan is a leavened, oven-baked flatbread. Originally, naan is a generic term for various flatbreads from different parts of the world. Naans are traditionally cooked in a Tandoor or earthern oven but can also be made in the oven at home. It can be serve with this delicious bread hot, with popular dishes like Tandoori Chicken or kebabs of different kinds. The dough for Naans needs to be made in advance so factor that into the preparation time.
PAPER THOSAI & MASALA THOSAI
Dosa as commonly known as Thosai is a fermented crepe or pancake made from rice batter and black lentils. Rice is ground finely to form a batter. Rice can be uncooked or parboiled. The mixture of urad dal (black lentils) and rice can be replaced with highly refined wheat flour to make a maida dosa or semolina for a rava dosa. A thin layer of the batter is then ladled onto a hot tava (griddle) greased with oil or ghee (clarified butter). It is spread out evenly with the base of a ladle or bowl to form a pancake. It is flipped to heat both crusts and removed from the griddle when the crust becomes dry. Dosa are served hot, either folded in half or rolled like a wrap.
BRIYANI RICE
Briyani rice is a set of rice-based foods made with spices, rice (usually basmati) and meat, fish, eggs or vegetables. The name is derived from the Persian word berya(n) which means "fried" or "roasted".
